The Gaggia Classic Evo is a 100% Italian espresso machine with a single boiler for dual use and is a great choice for new home baristas. In 2023, Gaggia introduced the Classic Evo, which built on these foundations with a new OPV for extraction at 9 bar, updated steel components and a protective coating to prevent corrosion and scale formation in the boiler. Similar to the professional machines, the Classic Evo is equipped with a three-way solenoid valve, a 58 mm commercial portafilter and a commercial-style steam wand.

Features and benefits

The appeal of the Gaggia Classic machines has always been their adherence to the standards of specialty coffee. Espresso is now brewed at 9 bar pressure, thanks to an update to the OPV spring. To improve durability without sacrificing quality, Gaggia has kept the Classic's brass brew group, but has updated the group cover with a new polished steel finish that won't chip or peel over time. Gaggia has also updated the 58mm commercial portafilter, replacing the chrome-plated brass with stainless steel to better match the group and eliminate visual flaws that may have occurred with the previous design.

The exterior has changed little, apart from a more polished group cover. The Classic Evo is still housed in a one-piece steel frame and features a set of high-quality toggle switches and matching LEDs to operate the machine. Dry and easy donut shut-off is possible after brewing thanks to a three-way solenoid valve that drains waste water directly into the drip tray. The commercial 58mm stainless steel portafilter retains heat for temperature stability and is compatible with a wide range of premium portafilter baskets, tampons and other brewing accessories. The Classic Evo uses a commercial stainless steel steam wand to froth milk.

Inside, the Classic Evo is placed on a more solid foundation with an updated mounting plate that secures the pump and boiler, reducing noise caused by vibrations. In addition, special attention has been paid to the boiler, which is now protected with an inert, food-safe anti-scale coating that helps prevent scale formation and extends the life of the appliance.
